The Dehesa is a unique territory, a forest inhabited by holm oaks, cork oaks, and many other trees, shrubs, herbaceous plants, and countless animals of all sizes, all of which have coexisted for thousands of years. These places are currently in grave danger, mainly due to neglect and the enormous risk of fires in the summer months. For more than 20 years, we have been organically managing some 700 hectares of this small paradise called Dehesa, regenerating it through holistic rotational grazing in which all our organic animals (especially Iberian pigs and cows) are the protagonists. We know the world doesn't change in two days, but we're doing everything we can to ensure future generations find it better than we did. Yes, we know it's a pipe dream, but we're making it a reality; every slice of ham you try is another step we all take toward achieving this goal.
