It is the result of extraordinary work that far exceeds the minimum standards established for animal welfare and the regulations for organic production. For us, the most important thing is caring for the Earth. The Dehesa is a unique territory, a forest inhabited by holm oaks, cork oaks and many other trees, bushes, herbaceous plants and countless animals of all sizes, all of which have coexisted for thousands of years. At the moment, these places are in serious danger, mainly due to abandonment and the enormous risk of fires in the summer months. For more than 20 years, we have been organically managing some 700 hectares of this little paradise called Dehesa, regenerating it through holistic rotational grazing in which all our organic animals (mainly Iberian pigs and cows) are the protagonists. We are aware that the world cannot be changed in two days, but we are doing everything possible to ensure that future generations find it better than we found it. Yes, we know, it is a utopia, but we are making it a reality; each slice of ham you try is one more step that we all take to achieve this.
