Definition: 100% Iberico acorn-fed chorizo sausage from organic production.
Composition: Lean from 1st 100% Iberian acorn-fed pork, seasoned with garlic, hot paprika and extra rosemary, all from organic production and sea salt. The salt is virgin sea salt from the Atlantic certified by CAAE Standards for organic salt production and packaging.
Features: With a curing period of two months to three months depending on the caliber used.
For its preparation, the lean extras and other noble pieces are selected, chopped and minced exclusively from 100% organic acorn-fed Iberian pigs. This dough is seasoned with spices, all from organic production and sea salt, and is stuffed into natural casings. After a maturation-drying process of approximately two to three months, the chorizo acquires its color and texture, its intense flavor and its characteristic smell.
